Hylians are humans (standard) whereas Skeikah are human (Kessig), the rules for which are found in the free Plane Shift: Innistrad (PDF) download. In the same vein, Gerudo are human (Keldon) adapted to hot climates instead of cold and you can get the Keldon D&D rules from Plane Shift: Dominaria (PDF) for free too.
There’s more than just mapping between the races. For example, Wolfen Fenrison uses Tortle for Goron, swapping out claws for bludgeoning fists and Fire Resistance and Darkvision instead of Hold Breath and Survival Instinct.
Of the Hyrule patrons, Din is listed as Chaotic Good with the Domains of Light and War, Nayru is Lawful Good with Light and Knowledge, etc.
Similarly, if you want D&D stats for the likes of Bokoblin, Honox or Miniblin, then there are equivalent D&D races to use and where to find them.
